摘要:本实验研究了饥饿对小龙虾生化组成的影响,实验测定了0d,14d的条件下小龙虾腹部肌肉的水分、总糖、总脂和蛋白质含量。结果表明:饥饿0d,14d的小龙虾肌肉含水量分别为81.9%,81.5%,两组小龙虾含水量差异不显著(P>0.05);饥饿0d,14d后总糖含量分别为0.665%,1.664%;饥饿0d,14d后总脂含量分别为6.81%,2.69%,饥饿0d,14d后蛋白质含量分别为52.1%,32.6%;两组小龙虾的总糖,总脂和蛋白质含量均存在显著性差异(P<0.05)。62466

 Effects of Starvation on Contents of Moisture, Protein ,Total sugar and Lipid of Crayfish’s Abdominal Muscles

Abstract:The experiment studied the effects of starvation on the biochemical composition of crayfish. The moisture content, the total sugar content, the total lipid content and the protein content of crayfish’s abdominal muscles were measured when crayfish had suffered in hungry of 0d and 14d. The results showed that the moisture content of the muscle from crayfish decreased from 81.9% in hungry of 0d to 81.5% in hungry of 14d ,The total sugar content of the muscle was from crayfish decreased from 0.665% in hungry of 0d to 1.664% in hungry of 14d ,The total lipid content of the muscle was from crayfish decreased from 6.81% in hungry of 0d to 2.69% in hungry of 14d ,The protein content of the muscle was from crayfish decreased from 52.1% in hungry of 0d to 32.6% in hungry of 14d ,The total sugar content, the total lipid content and the protein content of two groups of crayfish have significant differences(p<0.05).

1 引言

近年来,在现代养生理念的驱使下,小龙虾走上了餐桌,人们对小龙虾的价值有了越来越深刻的认识,食用小龙虾的人也日趋增多。小龙虾也称克氏原鳌虾、红鳌虾和淡水小龙虾。形似虾而甲壳坚硬。小龙虾体内的蛋白质含量较高,且肉质松软,易消化,对身体虚弱以及病后调养的人是极好的食物,虾肉还具有丰富的镁、锌、碘、硒等元素。较好的食用价值促使人们开始养殖小龙虾,大部分小龙虾的抗污染性十分强,因此在高污染性的条件下小龙虾依然可以生存。小龙虾养殖具有生产成本低、生产周转快、经济效益高、饲养方法简易且花工较少等优点,所以已越来越受养殖户的欢迎。在过去的几十年里,有关小龙虾形态学特征、营养价值、生殖发育、遗传育种等方面已有报道[1-3],但对其饥饿状态下的生理生化的研究国内外开展的都比较少。 饥饿对小龙虾腹部肌肉水分蛋白总糖及脂类含量的影响:http://www.751com.cn/shengwu/lunwen_68707.html
