摘要：本毕业论文首先从国内外对操控利润概念的相关研究切入，解读餐饮服务业操控利润的性质。之后以餐饮服务业会计、审计、税收管理办法为主要知识点，探究餐饮服务业操控利润的理论依据。理论结合实际，受生活中所见所闻餐饮服务业乱象的启发，联系互联网以及纸质文摘中相关的信息和实地调研的成果，总结出餐饮服务业操控利润的两种重要途径分别为通过餐饮发票操控利润以及非法降低成本操控利润。例如假餐饮发票，引进劣质食材，“三无”餐具等餐饮服务业的非法牟利行为。最终以政府为防范餐饮服务业操控利润而采取的先行措施为基础，提出我认为后续有效的防范措施，并讨论其可行性。在我国经济结构向第三产业转型的当前趋势下，使服务行业中的餐饮服务业能更健康有序的发展。6334

The common method of catering profit manipulating
Abstract： This paper research on manipulating profit concept from domestic and foreign entry, on the nature of catering services operating profit. The food service industry accounting, auditing, tax management as the main point of knowledge, the theoretical basis of food service industry profit manipulation.
Combining theory with practice, inspired by what one sees and hears catering services life mess, contact the Internet and paper abstracts of relevant information and research, summed up the two important ways to manipulate the food service industry profit respectively by catering invoices to control the profits and illegal cost control profits. For example, false catering invoices, the introduction of inferior ingredients, "illegal profiteering behavior and" tableware catering services.
Finally by the government to advance measures to prevent food service industry to control the profits and take as the basis, I think the proposed effective preventive measures, and discusses its feasibility.
